This special lot is produced by Fazenda Bom Jesus coffee farm, ran by couple Gabriel and Flavia and located in Cristais Paulistas in the Alta Mogiana region of Brazil. 

The cherries are loaded whole into steel barrels and left to ferment for 72 hours in an Oxygen free environment, before moving onto drying. This extra process has given the beans a distinct aroma reminiscent of a freshly baked Banana loaf, backed with incredibly rich sweetness and a wonderful chocolate note so often found in classic Brazilian coffee.

The mural shown is of a Crested Caracara, a bird native to the coffee growing regions of South America, it highlights the coffee farms commitment to preserving the native wildlife and vegetation.
